Wagyu is a highly prized breed of beef cattle from Japan, known for its exceptional marbling, tenderness, and rich flavor. The word "Wagyu" (和牛) simply means "Japanese cow" (wa = Japanese, gyu = cow).
Types of Wagyu
There are four main breeds of Wagyu cattle:
- Japanese Black (Kuroge Washu) – The most common breed, making up about 90% of Wagyu production, known for its intense marbling.
- Japanese Brown (Akage Washu) – Leaner than Japanese Black, with a mild, sweet flavor.
- Japanese Shorthorn (Nihon Tankaku Washu) – Less marbled but rich in umami flavor.
- Japanese Polled (Mukaku Washu) – Very rare, with a meatier texture.
Grading System
Wagyu beef is graded based on:
- Yield Grade (A to C) – A is the highest, indicating the best meat-to-bone ratio.
- **Marbling Score (BMS 1 to 12
